Potato and fish souffle

I've not posted a recipe in way too long. This is a fantastic dish, the first time I've made it! Beautiful!

Ingredients:
600g white fish (I bought a fish pie mix)
5 medium potatoes, peeled and sliced
1 teaspoon salt
1 tablespoon flour
1 teaspoon brown sugar
A pinch of pepper
3 tablespoons melted butter

For the topping:
3 tablespoons thick mayonnaise
45 g mature cheddar cheese, grated
3/4 teaspoon mustard
A pinch of cayenne pepper
1 egg separated

Divide the fish into suitable portions and put to one side. Steam the potatoes until tender line a medium sized oven dish with the potatoes.
Mix the flour, sugar and pepper on a chopping board then dip the fish in the seasoned flour and then the melted butter. Place the fish on the bed of potatoes and bake for 10 minutes whilst you prepare the topping.
Mix together the mayonnaise, grated cheese, mustard, cayenne pepper and egg yolk. Beat the egg white until fluffy and fold it into the mixture with a metal spoon. Remove the dish from the oven and spread the cheese topping over the fish portions evenly. Bake for a further 15 minutes until the souffle is puffed up and golden brown. Serve immediately.

Note to self: this dish I used needed double the topping to cover it properly. A smaller, deeper dish would probably be ok with the amounts in the recipe!
